Bermagui Gelati Clinic holds a dairy license which allows them to source local raw milk for production, resulting in a healthier, less processed ice cream, with low fat and carbs. Their fruit sorbets have raw fruit as their primary ingredient.
Traditional techniques are used to make all the gelati, concentrating on the key ingredient to allow it to exult. This makes their product different to other ice cream; the texture varies depending on flavour – this is the mark of true artisan gelato. Sorbets contain only the fruit for flavour and colour, making them free of fat, gluten, dairy and eggs.
Francesca and Alberto use cold pressing techniques to ensure the fruit nutrients are preserved. Milk gelato are similarly made using only pure ingredients with no flavourings or colourings. Passion for gastronomy does not allow for commercial compromise!
